Red Potato Side Dish

I recently made these potatoes with the spices and herbs I had on hand, because I ran out of the ones my recipe called for.  So in essence, it’s a new recipe!  It was good and everyone loved them so I thought I would share the new recipe with you.

Red Potato Side Dish

3 pounds of small red potatoes

2-3 tablespoons of butter

1 TBS Paprika

2 TBS Curry Powder

1 TBS Garlic Powder

1 tsp Oregano

Boil potatoes until you can stab them with a fork easily, about 20 minutes.  Do not over cook.

Place butter in a microwave safe bowl and heat until melted.  This will depend on the type of butter you are using.  I like to start with 25 seconds, and go from there.  I don’t want to over heat butter either.  Once butter is all liquid, mix in herbs and spices.  You can then pour over all the potatoes, brush the butter mixture over the potatoes, or place potatoes on plate and pour butter mixture over them then.  Try each way and see which you like best.
